1. How are my private keys stored?

Ultimate derives for you a mnemonic seed phrase, which can be accessed in the wallet's settings. This is stored encrypted in your on device secure enclave. You also have the option to back this up to your iCloud / Google Drive account in encrypted form. Ultimate does not have access to your seed phrase.

2. What makes Ultimate better than other wallets?

Ultimate is a self-custody wallet, meaning you can easily import your seed phrase from another wallet like MetaMask or Phantom. If you just want to try it out, you can track your wallet address without importing your seed phrase.
